Ingredient Notes

  • Chicken – We make it with either boneless skinless chicken breasts or boneless skinless chicken thighs. Chicken thighs can cook a small longer (5-6 hrs) than chicken breasts (4 hrs).
  • Corn – canned, pre-cooked corn kernels
  • Red onion – could be swapped for yellow onion if preferred
  • Cilantro – adds a ton of flavor to this recipe! If you don’t like cilantro, abandon it out or swap for your favourite fresh herb
  • Lime – adds that zesty lime flavor that we’re going for! You could swap for lemon, but it won’t have quite the same flavor – lime pairs so well with cilantro in tacos!

In the base of a 6-quart slow cooker, place the chicken breasts, corn and onion slices.

Using a stand or immersion blender, blend the sauce ingredients and pour over slow cooker contents.

Cover and cook on low for 4-5 hours, until chicken is cooked through.

Shred chicken, then serve in tortillas topped with yogurt, shredded cabbage, and radish slices

Chicken Shredding Hack

This ‘hack’ will help you shred your chicken quickly and easily: transfer your cooked chicken to a clean bowl, then shred with an electric hand mixer. You can also use a paddle attachment in a stand mixer.


How to Serve

Well obviously tacos is one idea, but there are a bunch more ways you could use up your chicken:

  • burrito bowls– serve with rice, lettuce, pico de gallo, avocado (see how to cut an avocado) and a dollop of sour cream
  • taco salad– serve with lettuce, tomatoes, cheese, tortilla chips and salsa

Freezer Meal prep

Freezer crockpot meals are a STAPLE in our house. Prepare to have your life changed by how simple and convenient it is to have a freezer stash of dump & go crockpot meals.

How to turn this recipe into a freezer pack:

  1. Assemble the chicken and all other ingredients in a gallon-sized freezer bag (update– we no longer use plastic bags, we use ½ gallon stasher bags or glass meal prep containers, our faves are the 3 quart glass containers from IKEA).
  2. Squeeze out as much air as possible.
  3. Freeze for up to 3 months.

So incredibly simple! When you’re alert to cook, you will need to thaw completely before placing everything in the slow cooker and cooking on low for 4-5 hours.


  • Fridge – let cool completely, then store in an airtight container for up to 4 days in the fridge
  • Freeze- this recipe can be frozen before or after cooking. Either way, store for up to 3 months and thaw before cooking or re-heating
